The month of April is all about simple, refreshing meals that nourish and renew. These lovely recipes for April do not disappoint, with fresh spring produce and wholesome ingredients you can feel great about.

I love the transition into April. It's always a great reminder to pair down the heavier ingredients from the winter months and start swapping them out with lighter, seasonal options like delicate greens and more fresh salads. It's also a great time to do some kitchen spring cleaning, however that may look for you.
All of these recipes are also very east to prepare as well as mix and match. I'll often rewarm some roasted asparagus from the night before to go along with my scrambled eggs, for example. Feel free to get creative!
