Minestrone Soup

How to Make

Ingredients you'll need:

onion carrots celery potato zucchini kale garlic dried parsley dried oregano dried thyme

Ingredients (con't.):

bay leaf olive oil diced tomatoes tomato paste chicken broth cannellini beans small shell pasta brown sugar (optional) sea salt & pepper

Step 1: Prep

Trim and chop the onion, carrots, celery, potato, zucchini and kale, mince the garlic, and set everything aside.

Step 2: Sauté

Heat the olive oil in a soup pot over medium-low heat and sauté the chopped onions, followed by the other veggies, and finally the garlic.

Step 3: Simmer

Add the remaining ingredients except the kale and bring to a boil over medium high heat. Reduce the heat to low & simmer for 15 minutes.

Step 4: Enjoy

Stir in the chopped kale, letting it cook for a minute or so, and season with salt & pepper to taste. Enjoy your minestrone soup!❤️
