Preserved Lemons

How to Make

Ingredients you'll need:

5-6 Meyer lemons 1/3 cup sea salt

Step 1: Wash

Wash your hands well, and then wash all of the lemons and set aside in a clean colander or bowl.

Step 2: Prep

Slice the ends off each lemon and cut lengthwise as if you're going to quarter it, but stop just short of cutting all the way though.

Step 3: Salt

Pry apart the quartered sections a little and sprinkle a generous amount of salt over each sliced lemon.

Step 4: Brine

Add a coating of salt into a tall quart-sized Mason jar and place each lemon inside, sprinkling with some more salt as you go along.

Step 5: Ferment

Use a potato masher to press the lemons until covered with juice, then cover the jar and let it sit at room temperature for 2-4 weeks.

Step 6: Enjoy

To use your lemons, remove one from the jar, rinse well and remove any seeds, and finely chop. Enjoy your preserved lemons!❤️
