Roasted Butternut Squash Soup with Apple

How to Make

Ingredients you'll need:

butternut squash potatoes carrots apple olive oil onion garlic vegetable broth sea salt nutmeg black pepper

Step 1: Prep

Preheat the oven to 400°F. Peel and roughly chop the squash, potatoes, carrots and apple and add them all to a mixing bowl.

Step 2: Roast

Drizzle with some olive oil and a little salt and pepper to taste, and roast for about 35-40 minutes or until just browned.

Step 3: Cook and blend

Cook the remaining ingredients in a pot with a little olive oil, and carefully blend with the roasted veggies until smooth.

Step 6: Enjoy

Adjust seasonings with a little extra salt and pepper if desired, and serve immediately. Enjoy your soup!❤️
