Sweet Potato Latkes with Beet Kraut

Ingredients you'll need:

sweet potatoes onion eggs all-purpose flour olive oil garlic powder sea salt black pepper beet kraut or sauerkraut sour cream (optional)

Step 1: Prep

Peel and grate the sweet potatoes and onions, strain them through cheesecloth or paper towels, and whisk the eggs in a separate bowl.

Step 2: Mix

Add the strained vegetables, eggs and remaining ingredients to a large bowl and mix to combine well.

Step 3: Cook

Form 7-8 latkes with your hands and cook in olive oil in a large skillet warmed over medium heat for about four minutes per side.

Step 4: Enjoy
