- Preheat the oven to 400°F (200°C), grease a square baking dish with a thin coating of olive oil and wash the salmon fillets and set aside.½ teaspoon olive oil, 2 5-oz salmon fillets
- In a shallow bowl, whisk the tamari and brown sugar together and then add the salmon fillets and use your hands to coat them well with the marinade.2 teaspoons tamari, 2 teaspoons brown sugar
- Place the salmon in the baking dish, leaving room around each fillet. If the salmon still has the skin on, place them skin side down. Bake for 20 minutes or until the flesh turns opaque and flakes a little when cut with a knife.
- Use a large metal spatula to remove the salmon from the baking dish, season with a pinch of salt and pepper and garnish with fresh lemon slices. (For skin-on salmon, simply slide the metal spatula in between the salmon flesh and the skin to easily remove the skin before you serve it.)sea salt, freshly ground black pepper, ½ lemon

Storage: Leftover salmon will stay fresh in an airtight container in the fridge for up to 2 days. It's great cold in salads or gently reheated.
