- Place all of the ingredients into a covered Mason jar and shake to combine, or whisk together in a bowl.¼ cup olive oil, ⅛ cup red wine vinegar, 1 tablespoon fresh lemon juice, ½ teaspoon Dijon mustard, 1 clove garlic, ½ teaspoon dried oregano, ¼ teaspoon sea salt, freshly ground black pepper
- Serve immediately, or store in the fridge for later.

Notes
No red wine vinegar? Substitute apple cider vinegar, white wine vinegar, champagne vinegar, or extra lemon juice.
Sweet Greek dressing: Add a teaspoon of honey, or to taste (just note that it won't be vegan if you do add honey; use agave syrup for a vegan version.)
Storage: Store in an airtight container in the fridge for up to 4 days. Let it warm to room temperature and give it another shake just before serving.
