- Wash and finely chop the celery, red pepper and onion, and wash the lettuce; set aside. Place the tuna in a large mixing bowl and use a fork to separate into flakes.1 small stalk celery, ¼ small red bell pepper, 1 tablespoon red onion, 1 leaf green leaf lettuce, 2 ½ ounces canned tuna
- Add the vegetables and mayonnaise to the tuna as well as salt and pepper to taste, and mix well to incorporate.1 tablespoon mayonnaise, sea salt, freshly ground black pepper
- Toast the bread if desired and place the lettuce, tuna salad and sauerkraut on one slice, close and slice in half, and serve.2 slices bread, 2 tablespoons sauerkraut

Storage: Once assembled, this tuna sauerkraut sandwich will stay fresh for up to 24 hours in a food storage bag or covered container in the fridge.
Meal prep: You can make the tuna salad up to 4 days in advance and then assemble your sandwich just before eating.
