Maple Miso Roasted Asparagus (Easy Sweet & Savory Side)

This maple miso roasted asparagus is the perfect balance of sweet and savory, with bright green asparagus and a rich, umami glaze. It's a simple oven-roasted side dish made with just a handful of ingredients, and takes just 20 minutes from start to finish.

Extra asparagus on hand, or just looking for some ideas to mix up the usual asparagus routine? I've got you covered. This roasted asparagus recipe is anything but ordinary, and the Asian flavor profile is seriously next level when combined with the delicate woody flavor of the asparagus.

I decided to write this recipe to yield four servings since fresh asparagus is normally sold by the pound. That said, you can easily halve or quarter the recipe if you're cooking for one. Or, prep the full four servings of the miso sauce in advance and just roast as much asparagus as you need for your next meal. (It's SO good fresh out of the oven!)

Look for miso in the produce department or tofu section of your grocery store. White miso works particularly well for this recipe, but red miso works too!

Trimmed and seasoned asparagus spears on a parchment paper lined baking sheet.
Warm oven to 425°F (218°C) and trim, season & roast asparagus for 10-15 min.

🥧 Serving suggestions

This asparagus side pairs beautifully with any simple main dish such as this baked salmon or walnut chicken. If you have leftovers, it's also lovely chopped and added to a rice bowl or salad.

💭 FAQ

Do I need to peel the asparagus?

If you are using thinner, more tender stalks of asparagus, peeling is not needed. For very thick stalks, you can peel off the scales if you'd like although it's generally not necessary.

How do I know when the asparagus is done?

Asparagus is done cooking when it is bright green and tender but still slightly crispy. You should be able to easily pierce it with a fork.

  • 1 pound asparagus
  • 1 tablespoon olive oil
  • sea salt to taste
  • freshly ground black pepper to taste
Maple Miso Sauce
  • 1 tablespoon white miso or red miso (see notes)
  • 1 tablespoon maple syrup
  • 2 teaspoons rice vinegar
  • 1 teaspoon tamari or soy sauce, if gluten is not a concern

Method
 

  1. Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper for easy cleanup. Then, wash and dry the asparagus spears well, trim off the woody ends and arrange the spears on the lined baking sheet.
    1 pound asparagus
  2. Place all of the glaze ingredients into a mixing bowl and use a whisk to incorporate.
    1 tablespoon white miso, 1 tablespoon maple syrup, 2 teaspoons rice vinegar, 1 teaspoon tamari
  3. Drizzle the olive oil over the asparagus spears, season with a little salt and pepper, and roast for 10 minutes if using thin spears, or 15 minutes for thicker spears.
    1 tablespoon olive oil, sea salt, freshly ground black pepper
  4. Place the asparagus on a serving platter, drizzle the maple miso glaze over the spears and enjoy!

Notes

Miso: White miso works well for a maple miso sauce due to its mild and slightly sweet flavor, but red miso also works fine and gives the sauce a stronger, more robust flavor. Check the packaging to make sure it is gluten free if that is a concern (some varieties of miso are made using barley.)
Storage: Store in an airtight container in the fridge for up to 4 days.
