Creamy, tangy and just a little sweet, this cranberry chicken salad combines tender chicken with dried cranberries, crunchy celery and a simple Greek yogurt and mayonnaise base.

There's really no comparison between a good homemade chicken salad and anything you might find pre-made at the grocery store, am I right? And this easy chicken salad recipe takes only 15 minutes to prepare if you have cooked chicken on hand. (No worries if not: cooking instructions are included.) This small batch recipe yields two servings, making it one of my cooking for one faves as a dinner one night and lunch the next day situation.
Why this recipe works
I love this cranberry chicken salad because it's equally delicious whether you're eating it immediately and/or enjoying it the next day. Equal parts mayonnaise and Greek yogurt create a creamy base without making it overly heavy, and the celery and red onion balance the chicken and cranberries with freshness and crunch.

Look for dried cranberries wherever raisins are located. Any kind of plain Greek yogurt is fine to use including nonfat; I don't recommend regular yogurt for this recipe.

This chicken salad works well in a sandwich with or without some added lettuce, as a salad topping over simple greens, or as a snack alongside crackers or veggie sticks. It also makes a delightful lunch for one paired with a cup of butternut squash soup with apple.

Method
- Chop 1 stalk celery and finely chop 2 tablespoons red onion and place in a medium mixing bowl.
- Add 2 tablespoons mayonnaise, 2 tablespoons plain Greek yogurt, 1 teaspoon Dijon mustard, the juice of ¼ small lemon, ¼ teaspoon sea salt, freshly ground black pepper to taste, 1 ½ cups cooked chicken, and 3 tablespoons dried cranberries, and stir to incorporate the mayonnaise and Greek yogurt evenly. Add a little extra mayonnaise if necessary, to hold everything together.
- Serve immediately over greens or in a sandwich, or just enjoy on its own.

- Add chopped walnuts, pecans or almonds for extra crunch.
- Substitute halved grapes or raisins for the dried cranberries.
- Use all mayonnaise for a dairy-free version, or all Greek yogurt for an egg-free option.
