Creamy smashed avocado, crisp toast, and perfectly cooked eggs come together in this easy avocado toast recipe that's ready in just 10 minutes. Perfect for breakfast, lunch, or a quick anytime meal for one.

If you're craving a savory breakfast with protein, this café-worthy avocado and egg breakfast should do the trick. (Or, this classic avocado toast is equally awesome if you want to skip the egg.)

This easy recipe is one of my favorite single-serve egg recipes on a busy morning, but it also works beautifully as a simple lunch or light dinner for one. I love it because it's actually super satisfying no matter the time of the day, and it doesn't require any complicated prep or special ingredients…just a ripe avocado!

Plus, it's completely customizable. You can keep things simple with flaky salt and black pepper, or add toppings such as sliced tomato or red onion depending on what you have in the kitchen. I usually make it with fried eggs, but scrambled, poached or soft boiled eggs are all delicious too!

🌿 Ingredients

Ingredients for avocado toast with fried eggs.

A hearty bread like whole grain bread or sourdough bread works best for this avocado toast recipe. A medium avocado works well; just make sure that it's fully ripe first (you should be able to easily indent the skin with a little push.)

📝 Instructions

Halved avocado with a chef's knife.
Halve the avocado and remove the pit, then scoop the flesh out into a bowl.
Mashed avocado in a tan ceramic bowl.
Use the back of a fork to mash the avocado, and mix in a little salt & pepper.

Fry the eggs in a skillet over medium heat, and toast the bread.

Spread the avocado evenly on the toast, top with the eggs, and season to taste.

This egg and avocado toast recipe is totally satisfying on its own, but it also pairs well with fresh fruit, a smoothie, or a simple side salad for an easy lunch or light dinner. For a cozy weekend brunch, try serving it with coffee and a side of crispy breakfast potatoes.

  • 1 medium ripe avocado
  • sea salt to taste
  • freshly ground black pepper to taste
  • 2 teaspoons butter or olive oil for dairy free
  • 2 large eggs
  • 2 slices multi-grain bread or gluten-free bread

Method
 

  1. Slice the avocado in half, remove the pit and scoop the flesh into a small bowl (see notes). Use the back of a fork to mash the avocado until it's smooth and spreadable. Add a little salt and pepper and mix to incorporate.
    1 medium ripe avocado, sea salt, freshly ground black pepper
  2. Heat the butter in a medium skillet over medium-high heat until it bubbles and then crack the eggs in and cook for a couple minutes, flipping once and cooking for another 30 seconds for over easy, or covering and cooking on the same side for another minute for sunny side up.
    2 teaspoons butter, 2 large eggs
  3. While the eggs are cooking, toast the bread until crispy and golden.
    2 slices multi-grain bread
  4. Using a spoon, spread the avocado evenly on the toast, top with your eggs and season with a little more salt and pepper.
  5. Serve immediately, and enjoy!

Notes

How to pit an avocado: To remove the avocado pit, place the half with the pit in it on a hard surface and give the pit a fairly strong but controlled whack with a chef's knife to lodge the blade partway into the pit. Then, hold the avocado in one hand as you turn the knife with the other to loosen and remove the pit.
Storage: This recipe is best when consumed immediately, but if you need to save it (up to 24 hours in the fridge), you should remove and rewarm the egg separately over low heat on the stove or in the microwave.

    I make egg on avocado toast frequently for my breakfast. But cook my egg in the microwave. I break an egg into a buttered microwave safe dish; stir with a fork, add salt and pepper put into the microwave with a cover. In my microwave the egg cooks in 45 seconds. I sometimes have it plain but also add cheese, tomato or bacon at other times.
