    Feel free to use gluten-free bread instead of regular bread to make this recipe gluten free. For dairy free, replace the butter with olive oil or coconut oil.

    Halved avocado with a chef's knife.

    Step 1: Halve and place the avocado on a hard surface and give the pit a whack with a chef's knife to lodge the blade partway into the pit. Then, hold the avocado in one hand as you turn the knife with the other to loosen and remove the pit.

    Step 2: Use the back of a fork to mash the avocado until it's smooth and spreadable. Add a little salt and pepper and mix to incorporate.

    Step 3: Heat the butter in a small trying pan over medium-high heat until it bubbles and then crack an egg in and cook to your liking, flipping once if you're making a fried egg or mixing it around the pan for a scrambled egg.

    While the egg is cooking, toast the bread until crispy and golden.

    Step 4: Using a spoon, spread the avocado evenly on the toast, top with your egg and season with a little more salt and pepper.

      I make egg on avocado toast frequently for my breakfast. But cook my egg in the microwave. I break an egg into a buttered microwave safe dish; stir with a fork, add salt and pepper put into the microwave with a cover. In my microwave the egg cooks in 45 seconds. I sometimes have it plain but also add cheese, tomato or bacon at other times.
