Kimchi Grilled Cheese

If you love kimchi and also a good grilled cheese sandwich, this one is for you. Actually, ever since I started adding kimchi to grilled cheese it kind of ruined me for all the others. It's just. so. good.

Of course, I can't take credit for this culinary mash-up; it's been making the rounds for years. I think I'd first heard about it when Gordon Ramsay did one, and I realized that I need this in my life. Fun fact: I live right behind Ramsay's Kitchen in Boston (and someday, someday I will eat there;) But I digress.

You can pair this fabulous sandwich with a bowl of tomato soup or just enjoy it alone for all it's splendor. Either way, I'm pretty confident you'll be glad you did. 😉

🌿 Ingredients

I love using sourdough bread for this sandwich, but any hearty whole grain loaf will work! And feel free to use any variety of kimchi. Most are on the spicy side which pairs super well with the mild cheese, but you can also go with a milder version if spicy is not really your thing.

📝 Instructions

Step 1: Drain and chop the kimchi into small pieces, and warm a large skillet over medium heat and add half the butter.

Step 2: While the butter warms, spread one side of each slice of bread with the remaining butter.

Step 3: Place the bread in the skillet with the buttered sides up to let the undersides cook for a minute or so, and cook the kimchi alongside the bread, tossing it around in the butter as it warms.

Step 4: Then, flip the bread over and divide the cheese between each half, spread the kimchi over one of the halves, and flip the other slice over to make a sandwich.

Pro tip: Just use enough cheese to cover each slice of bread. You don't need to use the full four slices unless you like an extra cheesy grilled cheese. To achieve a classic melty texture, I would recommend at least one slice of American cheese though. 🙂

Step 5: Use a metal spatula to press down on the sandwich, and cook the first side for a minute or until golden brown. Then, carefully flip each sandwich over and cook the other side until the cheese has melted completely.

Step 6: Remove the sandwich from the pan, slice in half and enjoy!

Notes

Kimchi: Feel free to use any kind of kimchi for this recipe from mild to spicy, depending on your taste.
Cheese: Just use enough cheese to cover each slice of bread. You don't need to use the full four slices unless you like an extra cheesy grilled cheese. To achieve a classic melty texture, I would recommend at least one slice of American cheese.
