Whenever I make this classic dressing, it makes me want to brush up on my French language skills. Or go to France. It's just such a delightfully inspiring and fresh tasting treat over a Niçoise salad or even just some simple greens. So good.
I hope this is one of those recipes that you'll want to make over and over again once you see how simple it is. If you don't have any fresh herbs, you could also try this delicious apple cider vinaigrette which features pantry staples.

If you can't find champagne vinegar, you can easily substitute white wine vinegar which is nearly identical in taste.

Unless I'm making a batch of Niçoise salad, I'll usually just serve this dressing over mixed baby greens with some thinly sliced carrots or radishes.
It's also delicious paired with some steamed green beans and a hard-boiled egg or two for a simple light lunch or protein snack.

- Place all of the ingredients into a covered Mason jar and shake to combine, or whisk together in a bowl.⅓ cup olive oil, 2 tablespoons champagne vinegar, 1 small shallot, 1 tablespoon fresh thyme, 1 tablespoon fresh basil, 1 teaspoon Dijon mustard, 1 teaspoon honey, sea salt, freshly ground black pepper
- Serve immediately, or store in the fridge for later.
