5 Simple Recipes with Sauerkraut

by Allison Campbell · Last updated Jun 21, 2026 · This post may contain affiliate links · Leave a Comment

If you have a jar of sauerkraut in the refrigerator and aren't sure what to make with it next, you're in the right place. 🙂 Sauerkraut adds a bright, tangy flavor to everything from sandwiches and salads to grain bowls and simple sides.

One of the reasons I love cooking with sauerkraut is that it's incredibly easy to use; no chopping required. Better yet, it lasts for months so it's one of those rockstar ingredients I always try to have on hand.

What is sauerkraut?

Sauerkraut is finely shredded cabbage that has been naturally fermented, giving it its signature tangy flavor. While it's often associated with hot dogs and Reuben sandwiches, sauerkraut is surprisingly versatile and can be added to salads, sandwiches, and other simple meals.

What to do with leftover sauerkraut

  • Add it to a tuna salad
  • Top a turkey or veggie burger
  • Layer it inside a hummus wrap
  • Serve alongside roasted potatoes
  • Use it as a quick side dish

The recipes below are some of my all-time favorite ways to use sauerkraut.
