This zesty apple cider vinaigrette comes together in just five minutes and instantly makes any salad or bowl recipe pop. It yields four perfectly portioned servings and features real pantry staples like olive oil and Dijon mustard (no mystery ingredients here!) Just give it a shake and store it in the same jar.

This simple ACV dressing happens to be one of my most favorite tiny kitchen rituals. It takes just minutes to make but somehow makes the whole meal feel more intentional. One thing I love about this dressing in particular is that it stays fresh for at least a week in the fridge since it only uses pantry ingredients. So if you're cooking for one you'll appreciate that the four servings can absolutely be spread out over the week.

I usually have this recipe in regular rotation here along with my Greek dressing and Niçoise dressing, but this one is the easiest of the three! Let me show you how to make it.

🌿 Ingredients

Apple cider vinegar, olive oil and Italian seasoning jars laying on a brown wood table.

The ingredients for ACV dressing should be readily available at any large grocery store. If you don't have olive oil on hand, avocado oil is a great substitute.

I've tried different ratios of oil to vinegar for this recipe, but the one in this recipe consistently yields the perfect balance between the tanginess of the vinegar and Dijon, and the slight sweetness of the honey. Chef's kiss. ❤️

📝 Instructions

  • ¼ cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 2 teaspoons honey or maple syrup for vegan
  • ½ teaspoon Dijon mustard
  • ½ teaspoon Italian seasoning

Method
 

  1. Place all of the ingredients in a pint-sized Mason jar or other jar with a tight fitting lid.
    ¼ cup extra virgin olive oil, 3 tablespoons apple cider vinegar, ½ teaspoon Dijon mustard, 2 teaspoons honey, ½ teaspoon Italian seasoning
  2. Cover the jar tightly with the lid and shake vigorously for about 15 seconds.
  3. Shake again just before serving, and before each use (see notes).

Notes

Storage: Apple cider vinegar dressing can be stored in a covered jar in the fridge for up to a week. Note that as it refrigerates, the olive oil will start to become solid. To reincorporate the oil, let the dressing sit out at room temperature for 10-15 minutes. Once the oil warms up a little, give it a good shake just before using.
