Blue Spirulina Smoothie (Cloud Smoothie)

This refreshing blue smoothie recipe is naturally sweetened with banana, mango and pineapple for a creamy, tropical single-serve treat that's ready in just 5 minutes.

Ohhh this is for sure my favorite smoothie right now. It may just have to compete with my go-to green smoothie for a while as I figure out which I like better (but honestly, I just can't.) 😉 But first, credit where credit is due. The inspiration for this "cloud" smoothie came from both the viral Erewhon Coconut Cloud Smoothie and a blue smoothie I found over here on the East Coast at Life Alive Cafe that was so, so good. (Great place if you're ever in the Boston area.)

While I opted out of the coconut cream in the Erewhon version, I did use plain coconut yogurt for both the smoothie and the "clouds". And for extra protein I used soy milk and added some almond butter as well. But as promised, you don't need to add any extra sugar since the fruit makes it naturally sweet. If you do feel like a little extra sweetness though, by all means add a little honey (or maple syrup to make vegan.)

🌿 Ingredients

All of the ingredients with the exception of the blue spirulina powder should be readily available at any large grocery store. I ordered Lone Star Botanicals Organic Blue Spirulina Powder (affiliate link) and it worked out great. Look for plain soy milk or substitute with your favorite plant milk.

Increase speed to high and blend for 30 seconds to 1 minute.

🥧 Serving suggestions

This vibrant smoothie pairs beautifully with a slice of avocado toast in the morning. I also happen to love it with this deli-style lox bagel as a fun lunch. But honestly, it's absolutely fantastic on its own too.

What makes a blue smoothie blue?

Blue smoothies can get their blue coloring from a few different natural sources such as blue spirulina powder, butterfly pea flower powder or simply fresh or frozen blueberries which will impart more of a purplish-blue hue.

Does blue spirulina powder have a fishy taste?

No. While it does have a slightly earthy taste, blue spirulina powder does not taste fishy and its mild flavor blends right into a fruit smoothie to create a delicious sweet and earthy flavor profile.

Ingredients
  

  • 1 medium banana frozen in chunks
  • ½ cup plain coconut yogurt (see notes)
  • ½ cup unsweetened soy milk or other plant milk
  • ½ cup frozen mango
  • ½ cup frozen pineapple
  • 2 teaspoons almond butter
  • 1 teaspoon blue spirulina powder
  • ¼ cup ice optional, for extra iciness
  • honey or maple syrup; optional, for extra sweetness

Method
 

  1. Cut the banana into chunks and freeze for at least 20 minutes or overnight. Use the back of a spoon to paint "clouds" onto the inside of your smoothie glass using about half of the yogurt.

  2. Place the rest of the yogurt and the remaining ingredients in the order listed in a blender, and cover. Increase speed to high and blend for 30 seconds to 1 minute. If needed, use a blender plunger to press the fruit further down into the blender, or add a little water to thin.
    ½ cup plain coconut yogurt, ½ cup unsweetened soy milk, ½ cup frozen mango, ½ cup frozen pineapple, 2 teaspoons almond butter, 1 teaspoon blue spirulina powder, ¼ cup ice, honey
  3. Pour into your prepared glass and enjoy immediately or save in the fridge for up to 24 hours.

Notes

Coconut yogurt: I like Cocojune Pure Coconut Yogurt.
Blender: Use a professional-grade blender (if you have one) for an extra smooth texture, but a standard blender will work just fine too.
Storage: Blue smoothies will stay fresh in the fridge for up to 24 hours but are best when consumed immediately. They do not stand up well to freezing.
