Ohhh this is for sure my favorite smoothie right now. It may just have to compete with my go-to green smoothie for a while as I figure out which I like better (but honestly, I can't.) 😉 But first, credit where credit is due. The inspiration for this "cloud" smoothie (as my family now calls it) came from both the viral Erewhon Coconut Cloud Smoothie and a blue smoothie I found over here on the East Coast at Life Alive Cafe that was so, so good. (Great place if you're ever in the Boston area.)
While I opted out of the coconut cream in the Erewhon version, I did use plain coconut yogurt for both the smoothie and the "clouds". And for extra protein I used soy milk and added some almond butter as well. And as promised, you don't need to add any extra sugar since the fruit makes it naturally sweet. But if you do feel like a little extra sweetness, feel free to add a little honey (or maple syrup to make vegan.)

🌿 Ingredients
All of the ingredients with the exception of the blue spirulina powder should be readily available at any large grocery store. I ordered Lone Star Botanicals Organic Blue Spirulina Powder and it worked out great. I used plain soy milk for the extra protein but feel free to substitute with any plant milk.

Step 1: Cut the banana into chunks and freeze for at least 20 minutes or overnight. Use the back of a spoon to paint "clouds" onto the inside of your smoothie glass using about half of the yogurt.
Step 2: Place the rest of the yogurt and the remaining ingredients in a high speed or regular blender, and cover.
Step 3: Increase speed to high and blend for 30 seconds to 1 minute. If needed, use a blender plunger to press the fruit further down into the blender, or add a little water to thin.

Step 4: Pour into your prepared glass and enjoy.
📋 Substitutions
As written, this blue smoothie recipe is vegan, gluten free and dairy free. Feel free to make any of the following substitutions to customize it. Just make sure to use maple syrup instead of the optional honey if you want to keep it vegan.
- Banana - substitute half a small ripe avocado instead (you'll still want to chop and freeze it for at least 20 minutes)
- Coconut yogurt - substitute another plain plant-based yogurt or dairy yogurt instead
- Soy milk - substitute almond, oat or coconut milk instead, or use any kind of dairy milk
- Frozen fruit - use all mango or all pineapple if you don't have one of them on hand; it'll still be delicious!
- Almond butter - substitute peanut butter, SunButter, or just leave out

Blue smoothies will stay fresh in the fridge for up to 24 hours but are best when consumed immediately. They do not stand up well to freezing.

This is a wonderfully wholesome and kid-friendly smoothie recipe, and a great one to make with kiddos. They'll love "painting" the clouds onto their glasses (use clear plastic cups for littler ones.) Then, they can enjoy their blue sky creations after you pour in the smoothie. Bonus tip: this recipe makes two kid-sized smoothies or one large smoothie. 🙂

- ½ cup unsweetened soy milk or other plant milk

- ½ cup frozen pineapple
- 2 teaspoons almond butter
- 1 teaspoon blue spirulina powder (I used Lone Star Botanicals Organic Blue Spirulina Powder)
- ¼ cup ice optional, for extra iciness
