This vegan wrap is so refreshing on warm days and super easy to throw together with whatever veggies you have on hand. I just make sure to have some hummus in the fridge (store-bought is fine too!) and some large flour tortillas. It's filling yet still light, and packs well for make ahead meals like school lunches.
If you need more easy lunch ideas, try this delicious cranberry chicken salad, this avocado chicken salad or this Caprese chopped salad. All of these salads would be great in a wrap as well!

🌿 Ingredients
They key ingredients you'll need to make this veggie wrap are large tortillas, hummus and any kind of mixed greens. I love using garlic hummus or plain hummus, and I simply use whatever veggies I have available if I'm missing anything below.
See recipe card below for exact quantities.
📝 Instructions
Step 1: Peel the onion and carrot. Then, wash all of the veggies, halve the tomatoes and thinly slice the rest.
Step 2: Place half of the hummus onto each wrap.
Step 3: Spread the hummus out evenly, leaving just a little room around the edges.
Step 4: Place a mound of greens on the middle of each wrap.
Step 5: Top the greens with the chopped veggies.
Step 6: Fold each side toward the middle, and then fold the side closest to you toward the middle.
Step 7: Continue to tightly roll the wrap away from you until it's closed.
Step 8: Slice each wrap in half and serve immediately or store for later.
📋 Substitutions
As written, this hummus wrap is vegan and dairy free. Feel free to make any of the following substitutions to further customize it.
- Flour tortillas - feel free to use any variety of tortillas (whole wheat, spinach, etc.) or use a GF option such as almond flour tortillas to make gluten free wraps
- Garlic hummus - use plain hummus or another favorite variety instead, or make your own homemade hummus
- Mixed greens - use any type of baby lettuce or chopped lettuce instead
- Red onion - use a yellow or white onion instead, or chopped scallions
- Carrot, cucumber and bell pepper - feel free to use different color bell peppers or leave any of these out if you don't have them; you could also add some sliced avocado if you'd like
- Cherry tomatoes - use grape tomatoes instead, or chop other small ripe tomatoes such as Campari or Roma tomatoes
📖 Variations
If you'd like to mix things up a little, here are a few of my favorite variations on this wrap recipe:
- Mediterranean veggie wrap - sprinkle some feta cheese crumbles on and add a few halved, pitted black olives before you wrap it up (I love this version!)
- Chicken veggie wrap - add some sliced grilled chicken to your wrap (you can buy prepared grilled chicken strips in the meat section of most large grocery stores to save time)
- Veggie cream cheese wrap - substitute hummus with veggie cream cheese or chive & onion cream cheese; this is another delicious option
🔪 Equipment
I used the following equipment to make this recipe:
- cutting board
- chef's knife
🍱 Storage
Veggie wraps will stay fresh for up to 48 hours in an airtight container in the fridge.
🎉 Top tip
Don't be afraid to pile your greens up pretty high on the tortillas. You may feel like you're adding too much but they really pack down once you roll everything up and that'll make your wraps nice and full.
Enjoy!
💭 FAQ
Mixed greens such as spring greens or baby lettuce work well for a base and can be topped with chopped mixed vegetables including carrots, cucumber, bell pepper, onion and tomatoes.
First, make sure you spread an even layer of hummus almost to the edges around the tortilla. After topping with a good amount of greens and veggies, roll the sides over first, followed by the side closest to you and continue to roll to form a fairly tight finished roll.
Yes; veggie wraps can be made ahead of time and stored for up to 24 hours in an airtight container in the fridge.
No. Feel free to swap the hummus out with veggie or chive & onion flavored cream cheese instead; this makes another delicious option.
