    Banana Nutella Crepes

    Warm and wholesome homemade crepes filled with sweet banana slices and topped with Nutella...what could be better?;)

    This is one of my all-time favorite "fancy" weekend recipes that everyone loves and that, honestly, is SUPER simple to make.

    And because I always like to try to make things just a bit healthier here (but still every bit as scrumptious), I added some ground flax seeds into the crepe recipe to add some fiber and extra nutrition like heart-healthy omega-3's.

    Besides the sweetness of the Nutella, these crepes are naturally sweetened with just bananas, no added sugar required. The key is to use nice ripe but still firm bananas; as long as they're still yellow on the outside, you're good. (If you want to make this breakfast into more of a dessert, try topping with this scrumptious whipped Greek yogurt.) 🙂

    Why Nutella crepes?

    Honestly, there's just something so perfect about the combo of Nutella with bananas and crepes. Don't get me wrong: I love beyond love regular chocolate and it would certainly work in this recipe. But if you haven't tried the banana and chocolate hazelnut Nutella combo...you should, and you're definitely in for a treat. 😉

    Like peanut butter and jelly, this combo just WORKS.

    Super simple ingredients in this one.

    Nutella and ripe bananas, of course. For the crepes, I used:

    • eggs
    • milk
    • flour (gluten-free flour works too!)
    • flaxseed meal
    • sea salt
    • butter

    And that's it!

    Strawberry Nutella crepes and beyond...

    In case you're wondering if you can use other kinds of fruit instead of bananas, the answer is yes, absolutely! Strawberry Nutella crepes are also a favorite of ours, but other berries would be delicious too.

    Ingredients Method Nutrition Notes

    Ingredients
      

    • 4 large eggs
    • 1 cup milk
    • 1 cup cold water
    • 1 ⅓ cup all-purpose flour or gluten-free flour (see notes)
    • ¼ cup flaxseed meal
    • ½ teaspoon sea salt
    • 4 tablespoons butter plus more to grease pan
    • 4 bananas
    • ½ cup Nutella

    Method
     

    1. Prep: Whisk the eggs and sugar together in a large bowl. Pour in the milk and water, and whisk to combine followed by the flour, flaxseed meal and salt. Melt the butter and slowly add to the batter while whisking once more. Slice the bananas into thin slices or slivers and set aside.
    2. Cook the crepes: Heat a small crepe pan or skillet over medium heat. For each crepe, add a little butter to coat the pan and then pour in about ¼ cup of batter while lifting the pan to distribute it evenly. Cook the first side for a minute or two until the wetness of the batter disappears. Flip and cook another minute until light golden brown. Keep the crepes warm on a low oven or warming plate.
    3. Assemble: Working with one crepe at a time, spread a thin coat of Nutella down the middle, place about 6 banana slices on the Nutella, and then roll it all up. Gently heat the remaining Nutella in the microwave on low power for 30 seconds or so (don't overheat). Place about 3 crepes on each serving plate and top everything with more bananas and drizzle with warmed Nutella.
    4. Enjoy: Serve immediately, and enjoy!

    Notes

    Gluten-free flour: I used Bob’s Red Mill 1:1 Gluten Free Flour Blend for the gluten-free version and it worked like a charm. Just make sure the one you choose is white or brown rice based and not bean based as the flavor may be too strong for these delicate beauties (Bob’s also has an all-purpose flour that is garbanzo bean based–I do not recommend this one for this recipe.)
