Oooh how I love summer cuisine. Besides not having to actually cook a lot of warm meals, my other favorite thing about this season is the incredibly fresh produce that graces our local farmers markets and shops. I could literally could eat the salad recipes below alone and nothing else all summer long; they're that good.

I've included my favorite summer dishes below, and they're all easy to make and perfectly portioned for just one or two servings. Hope you enjoy them too. 🙂
